Shrimp with Chimichurri Sauce and Zucchini Noddles

Ingredients
- 2 cups shrimp (cooked with instructions on package)
- 1 zucchini spiralized
- 6 cherry tomatoes, sliced
- 1 tsp olive oil
- 1 bunch parsley
- 2 cloves garlic
- 1 tsp kosher salt
- 1/2 tsp red pepper flakes
- Juice of 1 lime
- 2 tbsp olive oil
- 1/4 tsp black pepper
- Cook shrimp using instructions on the package
- In a skillet add 1 tsp olive oil and cook zucchini noodles on medium heat for 5 minutes
- Meanwhile in a food processor add all of the Chimichurri sauce ingredients and blend until combined
- Add shrimp, noodles, and sauce to a bowl and toss.
- Top with sliced cherry tomatoes and serve
