Double Salsa Shredded Chicken "Tacos"

Ingredients
- 2 servings shredded chicken find recipe here
- 1 yellow onion chopped
- 1 clove of garlic minced
- 1/2 tsp olive oil
- 9 sturdy romaine lettuce leaves washed and dried
- 1 1/2 cup Roasted Salsa see recipe here
- 3/4 cup Tomatillo Avocado Salsa see recipe here
- 12 sliced cherry tomatoes
- 1/4 cup chopped cilantro
- 1/2 avocado sliced
- 1 jalapeno chopped
- In a skillet over medium heat add olive oil, onion, and garlic and saute until translucent. Add shredded chicken and 3/4 cup Roasted Salsa. Mix, cover, and simmer at low heat for 15 minutes.
- When chicken is finished cooking add shredded chicken to each lettuce leaf to create a taco.
- Top each evenly with Roasted Salsa, Tomatillo Avocado Salsa, cherry tomatoes, avocado, jalapeno, and cilantro
