Double Salsa Shredded Chicken "Tacos"

Recipe
Prep Time: 30 min  Total Time: 30 min Servings:4
 Ingredients
  • 2 servings shredded chicken find recipe here
  • 1 yellow onion chopped
  • 1 clove of garlic minced
  • 1/2 tsp olive oil
  • 9 sturdy romaine lettuce leaves washed and dried
  • 1 1/2 cup Roasted Salsa see recipe here
  • 3/4 cup Tomatillo Avocado Salsa see recipe here
  • 12 sliced cherry tomatoes
  • 1/4 cup chopped cilantro
  • 1/2 avocado sliced
  • 1 jalapeno chopped
Instructions
  1. In a skillet over medium heat add olive oil, onion, and garlic and saute until translucent.  Add shredded chicken and 3/4 cup Roasted Salsa.  Mix, cover, and simmer at low heat for 15 minutes.
  2. When chicken is finished cooking add shredded chicken to each lettuce leaf to create a taco.
  3. Top each evenly with Roasted Salsa, Tomatillo Avocado Salsa, cherry tomatoes, avocado, jalapeno, and cilantro
