Day 15

Breakfast
Pancakes with Sauted Veggies 

Recipe
Prep Time: 15 min  Total Time: 30 min Servings:1
 Pancake Ingredients
  • 2 eggs
  • 1 banana
  • 1 tsp cinnamon
  • 3 raspberries
  • 1 tsp olive oil
Sauted Veggies Ingredients
  • 1/2 cup spinach
  • 6 cherry tomatoes, sliced
  • 3 baby bella mushrooms, sliced
  • 1 tsp olive oil
Pancake Instructions
  1. Mash banana until creamy, add eggs, cinnamon and whisk until blended
  2. Place add olive oil into skillet on medium heat. Place tablespoon full drops of batter onto skillet. Cook 3-5 minutes and cook 3-5 minutes on other side.
  3. Warm Raspberries in microwave for 15-30 seconds and top over pancakes
  4. In same skillet as pancakes were cooked add olive oil and veggies and saute

Lunch
Waldorf Chicken Salad
 

Recipe
Prep Time: 10 min  Total Time: 10 min Servings:2
Ingredients
  • 1 cup shredded chicken recipe here
  • 1 tbsp chopped walnuts
  • 6 grapes from the carb section of the tray and slice
  • 4 celery stalks, divided
  • 1 tsp of this mayo recipe
Instructions
  1. Add 3 tablespoon diced celery, slice grapes, walnuts and shredded chicken an combine

Dinner
3 Herb Lime Salmon with Asparagus, Spaghetti Squash, and Hashbrowns
 

Recipe
Prep Time: 20 min  Total Time: 30 min Servings:2
Dressing Ingredients
  • 1 bunch mint
  • 1 bunch cilantro
  • 1 bunch basil
  • Juice from 1 lime
  • 1 tsp sea salt
  • 1/4 crushed red pepper flakes
  • 2 gloves garlic
  • pepper to taste
  • 1 tbsp olive oil
Hashbrowns
  • 1 cup spaghetti squash
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp red pepper flakes
  • 3 tbsp chopped onion
  • 1 tsp olive oil
Other Ingredients
  • 2 servings of salmon
  • 6 stalks asparagus
  • salt and pepper to taste
Instructions
  1. Preheat oven to 425.  Place salmon on a lined baking sheet and add salt and pepper.  Cook 20-25 minutes depending on salmon thickness 
  2. Steam asparagus in a steamer pot
  3. Add all the dressing ingredients to a food processor and blend until its and even sauce.
  4. Lay spaghetti squash out on a paper towel and press out the water.  Add squash and other ingredients to a bowl and mix.  Create 2 patties and place on skillet on medium heat.  Take spatula and press flat once on skillet.  Cook 5-7 minutes and flip and cook the same on the other side but do not press with spatula.
  5. Lay asparagus on plate, top with hashbrowns, salmon and drizzle with 1 tablespoon of dressing.
  6. Save the rest of the dressing in refrigerator.
