Day 16

Breakfast
Baked Stuffed Bell Pepper

Recipe
Prep Time: 15 min  Total Time: 60 min Servings:1
 Pancake Ingredients
  • 2 eggs
  • 1 bell pepper cored and de-seeded
  • 1/2 cup spinach
  • 2 tbsp chopped mushrooms
  • 1 tbsp chopped onion
  • 1 tsp olive oil 
  • 1 cup fruit of choice
Instructions
  1.  Preheat oven to 350 and place bell pepper on lined baking sheet.
  2. Add olive oil to skillet at meduim to low heat.  Add onions and cook until translucent
  3. Add mushrooms and cook until soft, then add spinach until soft. Remove from heat
     and place in pepper.
  4. Scramble eggs and poor over vegetables into bell pepper
  5. Cook for 40 minutes

Lunch
Fruit and Veggie Plate

Prep Time: 10 min  Total Time: 10 min Servings:1
Ingredients
  • 2 cups veggies of choice
  • 1-2 hard boiled eggs
  • 1 cup fruit
  • Salsa, see recipe here

Dinner
Spicy Cajun Shrimp with Pineapple Mango Salsa Tacos
 



Recipe
Prep Time: 20 min  Total Time: 30 min Servings:1
Ingredients
  • 1 cup shrimp
  • 2 tsp cajun seasoning
  • 2 lettuce hearts
  • Pineapple Mango Salsa see recipe here
  • 1 tsp lime juice
  • 3 tbsp water
Instructions
  1. In a skillet on medium heat add lime juice, water, and shrimp.  Add half the cajun spice on top of shrimp and cook until pink.  Drain water and juice and flip shrimp.  Add the rest of the cajun spice and turn off heat.
  2. Place shrimp in lettuce hearts and top with pineapple mango salsa.
  3. Serve with a side salad
