Cajun Carmelized Pineapple Mint Salmon

Carmelizing the pineapple is so easy and makes this recipe.

Ingredients
- 2 servings of wild salmon
- 1 cup fresh pineapple chunked
- 1 tbsp olive oil divided
- 1 tsp cajun seasoning (Note: read ingredients)
- 1 tsp cinnamon
- 1 tsp mint
- Preheat oven to 425. While preheating, place salmon on a lined baking sheet and rub with a tiny amount of olive oil and sprinkle with cajun seasoning. Place in oven and cook for 40 minutes.
- Meanwhile, in a skillet, take remaining olive oil and add pineapple. Sprinkle with half of the cinnamon and cook on a low to medium heat for about 5-10 minutes until it starts to carmelize. Once carmelized, flip pineapple and sprinkle with remaining cinnamon and cook until carmelized on other side then remove from heat.
- Once salmon is cooked, remove and top with pineapple and sprinkle with mint.
- Serve with favorite side dish or side salad
