Cajun Carmelized Pineapple Mint Salmon

Carmelizing the pineapple is so easy and makes this recipe.

Recipe
Prep Time: 30 min  Total Time: 30 min Servings:2
 Ingredients
  • 2 servings of wild salmon
  • 1 cup fresh pineapple chunked
  • 1 tbsp olive oil divided 
  • 1 tsp cajun seasoning (Note: read ingredients)
  • 1 tsp cinnamon
  • 1 tsp mint
Instructions
  1. Preheat oven to 425. While preheating, place salmon on a lined baking sheet and rub with a tiny amount of olive oil and sprinkle with cajun seasoning.  Place in oven and cook for 40 minutes.
  2. Meanwhile, in a skillet, take remaining olive oil and add pineapple.  Sprinkle with half of the cinnamon and cook on a low to medium heat for about 5-10 minutes until it starts to carmelize.  Once carmelized, flip pineapple and sprinkle with remaining cinnamon and cook until carmelized on other side then remove from heat.
  3.  Once salmon is cooked, remove and top with pineapple and sprinkle with mint.
  4. Serve with favorite side dish or side salad
