Baked Salmon with Mango Pineapple Salsa

Baked Salmon with Mango Pineapple Salsa

Recipe
Prep Time: 25 min  Total Time: 25 min Servings: 2
 Ingredients
  • 2 servings of organic wild salmon
  • Tiny amount of olive oil divided
  • 1 cup chopped pineapple
  • 1 cup chopped mango
  • 1 tbsp chopped mint
  • 2 tbsp chopped cilanto
  • 1/4 cup chopped red onion
  • 2 tbsp fresh lime juice
Instructions
  1. Preheat oven to 425 degrees and place salmon on a baking rack.  Add olive oil to coat top of salmon. Season salmon with your choice of seasoning.  Bake for 25 minutes or less depending of thickness of fish
  2. Meanwhile while salmon is cooking, add the ingredients from the pineapple to lime juice into a bowl and combine.  
  3. When salmon is done add salsa on top and serve with favorite side dish
Notes
  1. Make extra salsa its very good and can be added to other recipes or on its own
  2. Salsa is best after being refrigerated overnight, the flavors start to combine
