Breakfast
Smoothie with Scrambled Eggs


Recipe
Prep Time: 15 min  Total Time: 15 min Servings:1
 Pancake Ingredients
  • 3 eggs
  • 2 tbsp chopped onion
  • 2 tbsp riced cauliflower
  • 1 tsp coconut oil
  • salt and pepper to taste
  • 2 cups combo of spinach and kale
  • 1 tsp chopped mint
  • 1 cup combo of pineapple,  blackberries, and raspberries
  • 1/2 cup ice
Instructions
  1.  In a skillet over medium heat add coconut oil and onion and saute until translucent.  Then add riced cauliflower and cover and cook about 5 min stirring occasionally. Add eggs and cook stirring occasionally until eggs are cooked.  Add spices if desired. Remove and serve
  2. In blender combine 2 cups greens. mint, pineapple, berries, and ice and blend, serve cold
    .

Lunch
Chicken and Eggplant Kabobs with Baked Apples


 

Recipe
Prep Time: 20 min  Total Time: 30 min Servings:1
Ingredients
  • 1 cup cubed chicken breast
  • 2 cups sliced then quartered eggplant
  • 1 tsp coconut oil
  • 1 cup apple chopped
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1 tsp coconut flakes
  • 1 tsp cacao nibs
  • 1 tsp chopped walnuts
  • 1 tsp fresh lemon juice
  • 2 tsp Avocado Cilantro Salsa see recipe here (optional)
Instructions
  1. Preheat oven to 350. In a bowl mix apple, cinnamon, pumpkin pie spice and lemon.  Add to small oven safe baking dish or ramekin.  Bake 20 minutes until apples are soft.  When fully cooked, remove from oven and garnish with coconut, walnuts, and cacao nibs.
  2. Meanwhile in skillet on medium to low add coconut oil and chicken cubes.  Cook on both sides until cooked all the way.  Add eggplant chunks and cover skillet.  Cook about 2-3 minutes then flip.  Cook another 2-3 minutes until tender but not too soft so that it can still be placed on skewers.  Remove and place on skewers.  Top with Avocado Cilantro Salsa.

Dinner
Portobello Turkey Burgers with Sweet Potato Fries
 




Recipe
Prep Time: 30 min  Total Time: 30 min Servings:4-6
 Ingredients
  • 1 cup ground turkey breast
  • 1/8 tsp onion powder
  • 1/8 tsp garlic powder
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1 tsp olive oil divided 
  • 2 Portobello mushroom sliders (2 for each burger)
  • lettuce and tomato for burgers
Instructions
  1. Preheat oven to 400. While preheating, Wash and de-stem mushrooms.  Pat dry and rub both sides with a tiny amount of olive oil and then season with salt and pepper if you like.  Place on a baking sheet "gill" side up and bake for 8-10 minutes then flip and cook an additional 8-10 minutes and remove from oven
  2. Meanwhile, in a bowl combine ground turkey breast with onion powder, garlic powder, salt, and pepper and mix.  Create 2 slider sized patties.
  3. Place remaining olive oil in skillet at medium heat and cook patties, flipping half way through.
  4. Place lettuce and tomato on top of one mushroom bun, then add 2 patties,and then the other bun.
