Roasted Red Salsa Ingredients
Prep Time: 15 min Total Time: 2hr Servings:6+
- 1 1/2 ponds roma tomatoes quartered
- 1 tbsp olive oil
- 1 clove of garlic
- 1/2 medium red onion chopped
- 1/2 bunch of cilantro chopped
- 1/2 juice of a lime
- Preheat oven to 275. Place roma tomatoes in a bowl with minced garlic and olive oil and toss until covered.
- Once evenly coated spread out onto a lined baking sheet. Place in oven and cook for about 1 1/2 hours checking on them occasionally.
- Once the tomatoes are roasted, remove and place in food processor with all the other ingredients and blend.
- Store in an air tight container and refrigerate.

- 6 Tomatillos with paper skin removed then cubed
- 1 bunch of cilantro chopped
- 1 avocado
- 1/2 juice of a lime
- Place all ingredients in a food processor and blend. Refrigerate
