"Sausage" and Apple Stuffed Acorn Squash

The
key to this recipe is flavoring the ground turkey breast to taste like
sausage. Usually to do this you add spices that include brown sugar so I
omitted the brown sugar and just used the rest.

Ingredients
- 2 acorn squash washed and cut in half and core out the seeds
- 1 lb ground turkey breast
- 1 tsp kosher salt
- 1 1/2 tsp ground black pepper
- 1 1/2 tsp ground sage
- 1 1/2 tsp ground thyme
- 1/2 tsp dried marjoram
- 1/2 tsp red pepper flakes
- 1 tbsp olive oil divided
- salt an pepper to taste
- Preheat oven to 400. While preheating, place your squash on a lined baking sheet and rub squash side with olive oil and sprinkle with salt and pepper. Place in oven and cook for 40 minutes
- Meanwhile, in a skillet take remaining olive oil and add to skillet with onion and garlic. Saute until transparent.
- Add ground turkey breast, kosher salt, pepper, ground sage, thyme, marjoram, and pepper flakes and mix. Break apart turkey until turkey has browned. Add apple and celery and mix. Cover and simmer for 15 minutes until apple and celery are tender.
- Remove cover and add fresh chopped sage and stir.
- Once squash has cooked, remove from oven and spoon turkey mixture into squash.
- Turn oven temp down to 350 and place squash back into oven and cook and additional 5 minutes.
- Serve with favorite side dish
